I'm passionate about creating delicious food and eating it, but life got better when I learned to cook great tasting, lower carb food. I said goodbye to 35 pounds, gained more energy, and stopped needing cholesterol medicine. When my low carb phobic friends started saying, "Is this really low carb?" and "Can I have the recipe?" Mimi says she makes it right before she uses it, but I knew that was not going to happen around here, so on Saturday, right after I included it in South Beach Recipes of the Week, I doubled her recipe and made a jar of dressing to go in the refrigerator.

I also used purchased Cardini's Caesar dressing here, which means this recipe has less than five ingredients and can be classified as one of my Easy South Beach Recipes. Stir in salad dressing and lemon juice and let it get slightly warm in the hot pan, then pour over salad and serve.
