I use a plastic tablespoon to scoop up just enough meat to make each meatball, and I get 24 meatballs from a pound of ground beef, not 40 like the recipe says.

I'm using whole wheat pastry flour and 100% whole wheat bread crumbs here to make the recipe more South Beach Diet approved, but if you don't care about that you could use any flour or bread crumbs. Roll each chicken breast, first in flour, then in egg, then in bread crumb/parmesan mixture.

Rosemary is an ingredient that can easily be overdone in a dish like this where it's going to be cooked for a long time, and I only used one teaspoon of finely chopped rosemary, but it's essential to the flavor I wanted for the soup.
